- 1½ pounds boneless skinless chicken breasts or thighs
- ¼ cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice or vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons honey or maple syrup
- 3 garlic cloves minced
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- Salt to taste
In a medium bowl, whisk together olive oil, soy sauce, lemon juice, Dijon mustard, honey, garlic, oregano, pepper, and salt.
Place chicken in a large resealable bag or container, pour marinade over, and seal. Refrigerate for at least 2 hours or overnight.
Preheat grill to medium-high heat.
Remove chicken from marinade and grill for 6–8 minutes per side, or until internal temperature reaches 165°F (74°C).
