Preparation

  • Preheat your gas grill to medium-high, about 450°F.
  • Brush the mahi mahi fillets with olive oil and season them with salt, pepper, and your choice of spices. Let them sit for a few minutes.

Grilling

  • Place the fillets on the hottest part of the grill and cook for 4-5 minutes on each side or until the fish flakes easily with a fork.
  • Monitor the thickness: 1-inch fillets take 4-5 minutes, 1.5 inches need 5-6 minutes, and 2 inches take about 6-7 minutes, all aiming for an internal temperature of 145°F.

Foil Packet Variation

  • For a foil packet, place seasoned mahi mahi at the center of heavy-duty foil, add vegetables, drizzle with olive oil, fold tightly, and grill for 12-15 minutes.

Notes

Pair with grilled vegetables, fresh salads, or rice pilaf. Use a drizzle of lemon juice for added freshness.
