  • 1.5 to 2 pounds ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked rice Brown rice can be used, adjust cooking time if necessary.
  • 1 can (15 ounces) diced tomatoes
  • 1 can (10.5 ounces) cream of mushroom soup Low-fat options can be used for a healthier version.
  • 1 cup shredded cheddar cheese Can substitute with low-fat cheese.
  • to taste Salt and pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
  • In a large mixing bowl, combine the cooked beef mixture with rice, diced tomatoes, cream of mushroom soup, and seasonings. Mix well.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.
  • Sprinkle the shredded cheddar cheese on top.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
  • Remove from the oven, let cool for a few minutes, and serve warm.

Notes

Serve with a side salad or crusty bread. Add sour cream or fresh herbs for extra flavor. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
