  • 1 lb ground beef
  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 2 cloves garlic minced
  • 4 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • fresh parsley chopped, for garnish

Instructions
 

Cooking

  • Brown the ground beef in a large pot over medium heat until no pink remains. Drain the excess fat.
  • Add the onion and carrots and cook until softened. Stir in the garlic and thyme until fragrant.
  • Add the potatoes and broth, bring to a boil, then simmer for 15 to 20 minutes, until the potatoes are tender.
  • Press a few potato pieces against the side of the pot to thicken the broth.
  • Reduce the heat to low, stir in the cream, and season with salt and pepper. Warm gently without boiling.
  • Ladle into bowls and top with parsley.

Notes

Refrigerate in shallow containers within two hours and use within three to four days. Reheat over low heat until steaming hot. Nutrition is an estimate per serving.
