Ingredients
  

  • 1 lb extra lean ground beef
  • 1 medium onion diced
  • 2 teaspoons garlic minced
  • 1 cup carrots sliced
  • 1 cup celery diced
  • 8 cups beef broth
  • 28 oz petite diced tomatoes
  • 2 medium potatoes peeled and diced
  • 1 cup fresh green beans trimmed and cut
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 1 cup frozen corn
  • cup freshly chopped parsley

Instructions
 

  • Brown the Beef: In a large Dutch oven or pot, brown the ground beef over medium-high heat, breaking it into small chunks along with the diced onion. Cook until the beef is no longer pink and the onion is tender. Add the minced garlic and cook for about 30 seconds until fragrant. Drain and discard any excess fat.
  • Add Vegetables and Broth: Return the pot to the stovetop over medium-high heat. Add the carrots, celery, beef broth, diced tomatoes, potatoes, green beans, tomato paste, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir to combine and bring the mixture to a boil.
  • Simmer the Soup: Reduce the heat to a simmer, cover, and let cook until the potatoes and vegetables are tender, about 25 minutes.
  • Add Final Ingredients: Stir in the frozen peas, corn, and freshly chopped parsley. Cook until heated through.
  • Serve: Ladle the soup into bowls and serve hot.
