  • 1 lb ground beef (80/20 recommended) 80% lean, 20% fat for optimal flavor
  • 1 medium onion, diced
  • 8 oz mushrooms, sliced Optional: can be omitted or replaced with other veggies
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour Can substitute with cornstarch for gluten-free option
  • 2 cups beef broth Gluten-free if needed
  • 1 cup sour cream Can substitute with full-fat Greek yogurt
  • 1 tbsp Worcestershire sauce Optional, for added flavor
  • to taste salt and pepper
  • 8 oz egg noodles Or serve with mashed potatoes

Instructions
 

Cooking

  • Heat a skillet over medium-high heat and cook the ground beef until it's no longer pink, breaking it apart as it cooks.
  • Add the diced onions and cook until they are soft.
  • Stir in the sliced mushrooms and cook until they shrink and begin to brown.
  • Add the minced garlic and let it sizzle for about a minute.
  • Sprinkle flour (or cornstarch) over the mixture and stir to combine.
  • Slowly pour in the beef broth, scraping up the browned bits from the bottom of the skillet.
  • Bring the mixture to a bubble and let it simmer for a few minutes to thicken.
  • Reduce the heat and stir in the sour cream until warmed, but do not let it boil.
  • Season with salt, pepper, and Worcestershire sauce to taste.
  • Serve over cooked egg noodles or mashed potatoes.

Notes

This dish is freezer friendly. Make a double batch and freeze leftovers for a quick meal later.
