  • 1 pound ground beef (85/15 or 90/10)
  • 3 tablespoons taco seasoning Homemade or 1 packet (about 1 ounce).
  • ½ cup water
  • 8 flour tortillas (6-inch), warmed
  • 1 cup diced tomatoes
  • ½ cup diced onion
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream
  • 1 lime, cut into wedges

  • Brown the beef in a large skillet over medium-high heat 6 to 8 minutes, breaking it up, until no pink remains (160°F). Drain the fat.
  • Stir in the taco seasoning and water and simmer over medium-low 5 minutes until thickened.
  • Warm the tortillas in a dry skillet 20 to 30 seconds per side or in the microwave in a damp paper towel, and keep them covered.
  • Put the beef in a warm serving dish, set out the toppings, and let everyone build their own tacos with sour cream, cilantro, and lime.

Notes

Refrigerate leftovers within 2 hours and use within 3 to 4 days. Nutrition is an estimate per serving (2 tacos with toppings).
