  • 1 lb ground sausage
  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 bell pepper diced
  • 1 cup long grain white rice uncooked
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 ½ cup low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with their juice
  • ¼ tsp salt plus pepper to taste
  • fresh parsley for garnish

Cooking

  • Heat the olive oil in a large deep skillet over medium-high heat, then crumble in the sausage and cook until browned and cooked through.
  • Add the chopped onion and diced bell pepper and cook until softened.
  • Stir in the rice, garlic powder, paprika, salt, and pepper and toast for 1 to 2 minutes.
  • Pour in the broth and diced tomatoes with their juice and stir well, scraping up the browned bits.
  • Reduce the heat to low, cover, and simmer for 18 to 22 minutes until the rice is tender and the liquid is absorbed.
  • Remove from the heat, let stand covered for 3 minutes, fluff with a fork, and garnish with parsley.

Notes

Taste before adding more salt because the sausage and tomatoes are already seasoned. Ground sausage is safe at 160 degrees F. Refrigerate leftovers within 1 hour of cooking in a shallow container.
