Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract for batter
  • 1 pinch salt
  • 1 can (20 oz) crushed pineapple in juice (not syrup)
  • 1 cup chopped nuts (optional) optional for topping
  • ½ cup unsalted butter softened

For the Frosting

  • 1 package (8 oz) cream cheese, softened
  • 1 teaspoon vanilla extract for frosting
  • 1 ½ cups confectioners' sugar
  • Coconut flakes for garnish (optional) for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish.
  • In a large bowl, mix together flour, sugar, eggs, baking soda, vanilla extract, salt, and crushed pineapple (including the juice) until well combined.

Baking

  • Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Frosting

  • For the frosting, beat together softened butter, cream cheese, and vanilla extract until smooth.
  • Gradually add confectioners' sugar, mixing until the frosting is creamy.

Assembly

  • Once the cake is slightly cooled but still warm, spread the frosting evenly over the top.
  • Sprinkle with chopped nuts and coconut flakes if desired.
  • Let the cake cool completely before serving.

Notes

Hawaiian Pineapple Cake is best served at room temperature. It pairs nicely with vanilla ice cream or whipped cream.
