- 1 lb 450g boneless skinless chicken breast, cut into thin strips
- 2 cups fresh green beans trimmed
- 1 tablespoon olive oil or avocado oil
- 3 cloves garlic minced
- 1 tablespoon fresh ginger minced
- ¼ cup low-sodium soy sauce or tamari for gluten-free
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- ½ teaspoon red pepper flakes optional
- Sesame seeds and chopped green onions for garnish optional
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Set aside.
Heat oil in a large skillet or wok over medium-high heat. Add chicken strips and cook for 5–6 minutes, until browned and cooked through. Remove and set aside.
In the same pan, add garlic and ginger, sauté for 30 seconds.
Add green beans and a splash of water. Cover and steam for 2–3 minutes until slightly tender.
Return chicken to the pan, pour in the sauce, and stir-fry everything together for 2–3 minutes until well coated and heated through.
Garnish with sesame seeds and green onions. Serve hot, optionally over rice or cauliflower rice.
