Ingredients
  

  • 1 lb 450g boneless skinless chicken breast, cut into thin strips
  • 2 cups fresh green beans trimmed
  • 1 tablespoon olive oil or avocado oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • ¼ cup low-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes optional
  • Sesame seeds and chopped green onions for garnish optional

Instructions
 

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Set aside.
  • Heat oil in a large skillet or wok over medium-high heat. Add chicken strips and cook for 5–6 minutes, until browned and cooked through. Remove and set aside.
  • In the same pan, add garlic and ginger, sauté for 30 seconds.
  • Add green beans and a splash of water. Cover and steam for 2–3 minutes until slightly tender.
  • Return chicken to the pan, pour in the sauce, and stir-fry everything together for 2–3 minutes until well coated and heated through.
  • Garnish with sesame seeds and green onions. Serve hot, optionally over rice or cauliflower rice.
