  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup flour Whole wheat flour is preferred.
  • ½ cup vanilla protein powder Whey or plant-based, as per preference.
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 handful nuts or chocolate chips (optional) Can also include chia seeds.

Preparation

  • Mash the ripe bananas until smooth.
  • Mix in eggs, yogurt, honey, and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, protein powder, baking soda, and salt.
  • Combine the dry ingredients with the wet ingredients, mixing until just combined.
  • Fold in any optional ingredients like nuts or chocolate chips.
  • Pour the batter into a lined or greased loaf pan.

Baking

  • Bake in a preheated oven at 350°F (175°C) for about 45 minutes.
  • Check with a toothpick; it should come out mostly clean.

Cooling

  • Let the bread cool in the pan for at least 10 minutes before transferring to a wire rack.

Notes

For best flavor, use very ripe bananas. If the batter looks dry, add a splash of milk. Experiment with different mix-ins for variety.
