  • 1 lb lean ground beef Opt for 80% lean for balanced flavor.
  • 3 cups sliced potatoes Can be any variety, but Yukon Gold works well.
  • 1 medium onion, diced Adds sweetness and flavor.
  • 1 can cream of mushroom soup Can substitute with homemade soup if preferred.
  • 1 cup shredded cheese Cheddar or Pepper Jack for extra flavor.

Optional Add-ins

  • 1 cup bell peppers, chopped Adds color and flavor.
  • 1 cup carrots, chopped Increase the veggie content.
  • 1 cup mushrooms, sliced For additional umami flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef along with diced onions until cooked through.
  • Layer the ingredients in a baking dish, starting with the cooked beef and onions.
  • Add a layer of sliced potatoes, followed by your choice of optional vegetables.
  • Pour the cream of mushroom soup over the layers and sprinkle cheese on top.

Baking

  • Cover the dish with aluminum foil and bake for approximately 30-40 minutes or until bubbling.
  • Remove the foil for the last 10 minutes of baking for a crispy top layer.

Notes

You can make this casserole a day ahead of time and refrigerate it before baking. Hobo casserole is freezer-friendly; just wrap tightly after cooling and freeze for up to three months.
