  • 1 lb Ground beef (93% lean) Use lean ground beef for healthier option.
  • 2 cups Small red potatoes, diced Alternatively, sweet potatoes can be used for added fiber.
  • 1 Yellow onion, finely chopped Sauté for added sweetness.
  • 1 cup Shredded cheddar cheese Use sharp cheddar for more flavor.

Spices

  • 1 tsp Paprika For smokiness.
  • 1 tsp Garlic powder Enhances the flavor.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper For seasoning.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Rinse and chop the vegetables: small red potatoes, onion, and any additional veggies if desired.
  • In a bowl, mix ground beef with paprika, garlic powder, salt, and pepper.

Cooking

  • Heat a skillet over medium-high heat. Add a small amount of oil and brown the ground beef for 4-5 minutes, breaking it apart as it cooks.
  • Once no longer pink, drain excess fat and add the chopped onions and potatoes to the skillet. Sauté for about 5 minutes until onions are translucent.
  • Layer the mixture in an 8x8-inch baking dish and top with shredded cheese.
  • Bake in the preheated oven for 30 minutes until the cheese is bubbly.
  • Let it rest for 5 minutes before serving.

Notes

This casserole is great for meal prepping. It freezes well and reheats nicely in the oven or microwave.
