  • 1 small red onion, finely chopped
  • 1 large red bell pepper, diced
  • 1 unit jalapeno pepper, seeded and finely chopped Adjust spiciness as needed.
  • 1 large tomato, diced
  • ΒΌ cup fresh cilantro, chopped
  • 1 unit lime, juiced Juice should cover the mixture.
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust to taste.

Preparation

  • In a bowl, combine fresh corn kernels, chopped red onion, diced red bell pepper, chopped jalapeno pepper, diced tomato, and chopped cilantro.
  • Drizzle lime juice and olive oil over the mixture.
  • Season with salt and pepper, adjusting to taste.
  • Toss everything together until well combined.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Serving

  • Serve chilled as a dip with tortilla chips or as a topping for tacos, grilled chicken, or fish.

Notes

For added flavor, grill the corn for smokiness. Experiment with ingredients like avocado or black beans. Store in an airtight container for 3 to 4 days.
