Main Ingredients
- 1 lb ground beef lean
- 2 tbsp homemade taco seasoning 2 tsp chili powder, 1 tsp each garlic powder, cumin, and smoked paprika, 1/2 tsp salt, 1/4 tsp pepper
- ½ cup water or low sodium beef broth
- 8 small tortillas 6 inch, flour or corn
- 2 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream
- 1 jalapeno sliced
- 1 cup guacamole
Cooking
Brown the beef. Cook the beef in a hot skillet over medium high heat for 7 to 10 minutes, breaking it up, until no pink remains. Drain extra grease.
Season. Stir in the taco seasoning for 1 minute, then add the water or broth and simmer for 2 to 3 minutes until glazed.
Warm the tortillas. Heat each tortilla in a dry skillet for 20 to 30 seconds per side and keep them stacked under a towel.
Assemble. Fill each tortilla with beef and add lettuce, tomatoes, cheddar, sour cream, jalapeno, and guacamole.
Substitutions: Use ground chicken or turkey for the beef (cook to 165 degrees F), and swap flour tortillas for corn.
Tips: Cook the beef to 160 degrees F and wear gloves when slicing the jalapeno.
Storage: Refrigerate the cooked meat for up to 3 days or freeze it for up to 3 months. Reheat to 165 degrees F.
