  • 6 slices bacon (chopped) Regular or turkey bacon can be used for a healthier option.
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh thyme (or 1 teaspoon dried) Fresh herbs enhance the flavor.
  • ¼ cup grated Parmesan cheese (optional) Mix with other cheeses for a cheesy twist.
  • 1 tablespoon chopped fresh parsley (for garnish) Garnish for presentation.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with olive oil, honey, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  • Spread the potatoes onto a lined baking sheet in an even layer.
  • Scatter the chopped bacon pieces over the potatoes.

Cooking

  • Roast for 35-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
  • Sprinkle with fresh thyme and Parmesan cheese (if using) and return to the oven for another 5 minutes.
  • Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

If you have leftovers, store them in an airtight container in the fridge for 3-4 days. Reheat in the oven to restore crispiness. For extra crunch, broil for a couple of minutes at the end. Don't overcrowd the baking sheet for even cooking.
