  • 2 large sweet potatoes peeled and cut into 1/2-inch cubes
  • 14 oz fully cooked chicken or turkey sausage sliced into 1/2-inch rounds
  • 1 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tsp dried thyme optional
  • salt and black pepper to taste
  • chopped fresh parsley for garnish

  • Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment if you like.
  • Toss the sweet potatoes with the olive oil, salt, and pepper and spread in a single layer. Roast for 15 minutes.
  • Whisk together the honey, soy sauce, garlic, and thyme if using.
  • Take the pan out of the oven, add the sliced sausage, drizzle with the glaze, and toss. Spread back into a single layer.
  • Roast for 15 to 20 minutes more, stirring once halfway, until the sweet potatoes are tender and the sausage is browned at the edges.
  • Sprinkle with parsley and serve warm.

Notes

Nutrition values are an estimate per serving and vary with the sausage. Use fully cooked sausage; raw sausage needs more time and a thermometer reading of 165°F. Store leftovers in the refrigerator for 3 to 4 days and reheat to 165°F.
