Main Ingredients
- 14 oz smoked sausage such as kielbasa, sliced into 1/2 inch rounds
- 2 large sweet potatoes peeled, cut into 1 inch cubes
- 1 large head broccoli cut into florets
- 1 tbsp olive oil
- ¼ tsp black pepper to taste
- ¼ cup honey
- ¼ cup low sodium soy sauce or tamari
- 4 cloves garlic minced
- 1 tbsp apple cider vinegar
- 1 tsp cornstarch mixed with 1 tbsp water
Cooking
Heat. Set the oven to 400 degrees F and line a baking sheet. Roast. Toss the sweet potatoes with oil and pepper and roast 15 minutes.
Sauce. Simmer the honey, soy sauce, garlic, and vinegar in a saucepan over medium heat.
Thicken. Whisk in the cornstarch mixture and cook 1 to 2 minutes until glossy.
Combine. Add the sausage and broccoli to the pan and toss with half the sauce.
Finish. Roast 15 to 20 minutes until the sweet potatoes are tender and the sausage is browned.
Glaze. Drizzle with the remaining sauce and serve hot.
Substitutions: Use turkey smoked sausage and reduced sodium soy sauce to cut the salt, or tamari for gluten free.
Tips: Keep the sauce at medium heat so the honey does not scorch, and cut the sweet potatoes evenly.
Storage: Refrigerate up to 3 days and reheat until steaming hot.
