  • 1 pound Brussels sprouts, trimmed and halved Make sure to trim off any yellow leaves.
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon red pepper flakes Optional for extra heat.

Bacon

  • 6 slices thick-cut bacon, cut into 1-inch pieces Can substitute with turkey bacon for a lighter option.

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the Brussels sprouts with olive oil, honey, salt, and pepper until well coated.
  • Spread the coated Brussels sprouts on a baking sheet in a single layer.
  • Place the cut bacon on a separate baking sheet.

Cooking

  • Roast the Brussels sprouts and bacon in the preheated oven for about 20-25 minutes until the Brussels sprouts are tender and the bacon is crispy.
  • While they are roasting, mix the maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes (if using) in a small bowl.
  • Once the Brussels sprouts and bacon are done, toss them together with the glaze.
  • Serve immediately and enjoy!

Notes

For extra crunch, consider broiling the Brussels sprouts for a minute or two after roasting. Leftovers can be stored in an airtight container in the refrigerator for about 3 days. Reheat in the oven or microwave, but note that the bacon may lose some crispiness.
