For the Chicken:
- 2 boneless skinless chicken breasts
- Salt and black pepper to taste
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp olive oil
- For the Honey Pepper Glaze:
- ½ cup honey
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- ½ tsp red pepper flakes
For the Pasta:
- 1 cup pasta penne or rotini
- 1 tbsp butter
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
For the Panini:
- 2 slices ciabatta or panini bread
- 1 tbsp mayonnaise
- 1 tbsp Dijon mustard
Prepare the Chicken: Season the chicken breasts with salt, black pepper, garlic powder, and onion powder. In a skillet over medium heat, add olive oil and cook the chicken until golden brown and cooked through. Remove and slice into strips.
Make the Honey Pepper Glaze: In a saucepan, combine honey, soy sauce, apple cider vinegar, and red pepper flakes. Simmer until slightly thickened. Toss the sliced chicken in the glaze to coat evenly.
Cook the Pasta: Boil the pasta according to package instructions. Drain and set aside.
Prepare the Creamy Sauce: In a pan, melt butter over medium heat. Add heavy cream and bring to a simmer. Stir in grated Parmesan cheese until the sauce is smooth. Season with salt and black pepper to taste.
Combine Pasta and Sauce: Add the cooked pasta to the creamy sauce, stirring to coat the pasta evenly.
Assemble the Panini: Spread mayonnaise and Dijon mustard on the ciabatta or panini bread slices. Place the glazed chicken strips between the bread slices. Grill the sandwich in a panini press or skillet until the bread is crispy and golden.
