  • ¼ cup red onion, finely diced
  • ½ cup shredded sharp cheddar cheese (optional) For added flavor

Dressing Ingredients

  • ½ cup mayonnaise Can substitute with Greek yogurt for a lighter option
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste Salt and pepper

Preparation

  • In a large mixing bowl, combine the chopped broccoli, diced apple, dried cranberries, nuts, red onion, and shredded cheddar if using.
  • In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  • Pour the dressing over the salad ingredients and toss until evenly coated.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Give the salad a final toss before serving and enjoy chilled.

Notes

Serve this salad chilled for the best flavor. It can also be served in a hollowed-out apple for a creative presentation. Stays fresh for about 3 days in the refrigerator.
