- 1 can 15 oz chickpeas, drained and rinsed
- ¼ cup fresh lemon juice 1 large lemon
- ¼ cup tahini
- 1 small garlic clove minced
- 2 tablespoons olive oil plus more for serving
- ½ teaspoon ground cumin
- Salt to taste
- 2 –3 tablespoons water to adjust consistency
- Optional toppings: paprika chopped parsley, olives, cherry tomatoes, cucumber, feta, pine nuts
In a food processor, combine tahini and lemon juice. Process for about 1 minute until creamy.
Add garlic, olive oil, cumin, and a pinch of salt. Blend again.
Add chickpeas and blend while slowly adding water until smooth and creamy.
Taste and adjust seasoning if needed.
Spoon into a bowl, drizzle with olive oil, and top with desired garnishes.
Serve with pita bread, crackers, or fresh vegetables.
