Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • ¼ cup fresh lemon juice 1 large lemon
  • ¼ cup tahini
  • 1 small garlic clove minced
  • 2 tablespoons olive oil plus more for serving
  • ½ teaspoon ground cumin
  • Salt to taste
  • 2 –3 tablespoons water to adjust consistency
  • Optional toppings: paprika chopped parsley, olives, cherry tomatoes, cucumber, feta, pine nuts

Instructions
 

  • In a food processor, combine tahini and lemon juice. Process for about 1 minute until creamy.
  • Add garlic, olive oil, cumin, and a pinch of salt. Blend again.
  • Add chickpeas and blend while slowly adding water until smooth and creamy.
  • Taste and adjust seasoning if needed.
  • Spoon into a bowl, drizzle with olive oil, and top with desired garnishes.
  • Serve with pita bread, crackers, or fresh vegetables.
