  • ½ teaspoon turmeric
  • ¼ teaspoon red chili powder Adjust to taste for spice.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots, then cut them into uniform pieces (1/4 to 1/2 inch thick).
  • In a mixing bowl, combine honey, olive oil, cumin, coriander, garam masala, turmeric, red chili powder, and salt. Mix well.
  • Add the carrot pieces to the bowl and toss until they're evenly coated.

Roasting

  • Spread the coated carrots in a single layer on a large baking sheet.
  • Roast in the preheated oven for 20-25 minutes, stirring halfway through to prevent uneven browning.
  • Check for doneness by inserting a fork; the carrots should be tender and lightly caramelized.
