Ingredients
  

  • 2 cups cauliflower florets
  • 1 cup carrots sliced
  • 1 cup potatoes cubed
  • 1 bell pepper chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper optional
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, toss vegetables with olive oil and all the spices until evenly coated.
  • Spread the vegetables in a single layer on the prepared baking sheet.
  • Roast for 25–30 minutes, stirring halfway through, until the veggies are tender and slightly crisp on the edges.
  • Garnish with fresh cilantro if desired and serve warm.
