- 2 cups cauliflower florets
- 1 cup carrots sliced
- 1 cup potatoes cubed
- 1 bell pepper chopped
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon turmeric
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper optional
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss vegetables with olive oil and all the spices until evenly coated.
Spread the vegetables in a single layer on the prepared baking sheet.
Roast for 25–30 minutes, stirring halfway through, until the veggies are tender and slightly crisp on the edges.
Garnish with fresh cilantro if desired and serve warm.
