Main Ingredients
- 1 tbsp neutral oil
- 1 lb ground beef 80 percent lean
- 1 large onion diced
- 1 bell pepper diced
- 3 cloves garlic minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1 pinch cayenne pepper
- 15 oz kidney beans drained and rinsed
- 15 oz pinto beans drained and rinsed
- 15 oz diced tomatoes with juice
- 2 tbsp tomato paste
- 1 cup low sodium beef broth
- ½ tsp salt
Cooking
Brown the beef. Saute the beef in oil for 6 to 8 minutes until no pink remains.
Cook the vegetables. Add the onion, pepper, and garlic and cook for 4 to 5 minutes.
Add spices and liquid. Stir in the spices and broth, scraping the bottom of the pot.
Layer the cans. Add the beans, tomatoes, and paste on top without stirring.
Pressure cook. Cook on high pressure for 15 minutes, then release naturally for 10 minutes.
Substitutions: Use ground turkey in place of beef, and cook it to 165 degrees F.
Tips: Do not stir the tomatoes into the pot, so the bottom does not scorch. Toppings are not included in the nutrition numbers.
Storage: Refrigerate for 3 to 4 days or freeze for 3 months.
