  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 1 each red bell pepper, sliced
  • 1 each green bell pepper, sliced
  • 1 each yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the Italian sausage over medium heat until browned. Remove from skillet and drain excess fat.
  • In the same skillet, add the diced onion and garlic; sauté until the onion is translucent.
  • Add the sliced bell peppers and cook until tender.
  • Return the sausage to the skillet and stir in the can of diced tomatoes. Season with salt and pepper.
  • Pour the mixture into a casserole dish and sprinkle mozzarella cheese on top.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  • Serve hot.

Notes

For a twist, consider adding cooked pasta before baking. Use any combination of bell peppers you prefer and feel free to add red pepper flakes for some heat. Leftovers can be stored in an airtight container in the fridge for about 3-4 days.
