  • 1 pound ground beef Use lean ground beef to reduce fat content.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 10-ounce can diced tomatoes with green chilies, drained
  • 1 packet taco seasoning
  • 1 8-ounce can refrigerated biscuits Whole wheat biscuits can be used for more fiber.
  • 1 cup sour cream
  • 1 cup mayonnaise

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  • Add the chopped onion and bell pepper to the skillet and cook until softened.
  • Stir in the diced tomatoes and taco seasoning, and mix well.
  • In a separate bowl, mix together the sour cream and mayonnaise until smooth.
  • Spread the beef mixture evenly in a greased casserole dish.
  • Drop spoonfuls of the biscuit dough over the beef mixture.
  • Pour the sour cream and mayonnaise mixture over the top.
  • Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown and cooked through.
  • Cool slightly before serving and enjoy!

Notes

Serve warm, optionally add toppings like shredded cheese, jalapeños, or fresh cilantro. Can be paired with salad or cornbread. Leftovers can be stored in an airtight container for up to 3 days.
