Ingredients
  

  • 4 ribeye steaks 10–12 oz each, bone-in or boneless
  • tablespoons neutral oil e.g., canola, grapeseed, safflower
  • Kosher salt and freshly ground black pepper to taste
  • 4 tablespoons butter
  • 4 garlic cloves smashed
  • 4 sprigs fresh rosemary

Instructions
 

  • Preparation: Allow the steaks to sit at room temperature for 20 minutes. Season both sides generously with salt and pepper.
  • Searing: Heat a heavy skillet (preferably cast iron) over high heat. Add the oil, then place the steaks in the pan in a single layer. Cook for 4–5 minutes per side until a deep golden brown crust forms.
  • Flavoring: Add the butter to the pan. Once melted, introduce the smashed garlic cloves and rosemary sprigs. Stir to combine and spoon the butter mixture over the steaks.
  • Cooking to Temperature: Insert a meat thermometer into the thickest part of a steak. Continue cooking for 2–3 minutes until the internal temperature reaches 130–135°F (54–57°C) for medium doneness.
  • Resting: Remove the steaks from the pan and let them rest for 5 minutes to allow juices to redistribute.​
  • Serving: Slice the steaks against the grain, drizzle with the pan drippings, and serve immediately.
