Cake:
- 1 ½ cups almond flour
- ¼ cup unsweetened cocoa powder
- ⅓ cup granulated erythritol or other keto sweetener
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- ⅓ cup melted coconut oil or butter
- ¼ cup unsweetened almond milk
- 1 ½ teaspoons vanilla extract
- 1 tablespoon apple cider vinegar
Optional Keto Frosting:
- ½ cup butter softened
- ¼ cup powdered erythritol
- ¼ cup cocoa powder
- 2 –3 tablespoons heavy cream or coconut cream
Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.
In a large bowl, whisk together almond flour, cocoa powder, erythritol, baking soda, and salt.
In a separate bowl, whisk together eggs, melted coconut oil, almond milk, vanilla extract, and vinegar.
Combine wet and dry ingredients, stirring until a smooth batter forms.
Pour the batter into the prepared pan and smooth the top.
Bake for 22–27 minutes or until a toothpick inserted into the center comes out mostly clean.
Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
If using frosting, mix all frosting ingredients until smooth, then spread over the cooled cake.
