- 1 lb ground beef
- ½ cup chopped onion
- 2 cloves garlic minced
- 2 cups beef broth
- 1 cup heavy cream
- 4 oz cream cheese softened
- 1 cup shredded cheddar cheese
- ½ cup diced celery
- ½ cup diced cauliflower optional for texture
- 1 tbsp mustard
- ½ tsp paprika
- Salt and pepper to taste
- Chopped pickles and extra cheese for garnish optional
In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
Add onion, garlic, celery, and cauliflower (if using). Sauté for 3–4 minutes until softened.
Stir in beef broth and bring to a gentle simmer.
Mix in cream cheese, stirring until melted and smooth.
Add heavy cream, mustard, paprika, salt, and pepper. Simmer on low for 5 minutes.
Stir in shredded cheddar and let it melt completely.
Serve hot, topped with chopped pickles and more cheese if desired.
