For the taquitos

  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 4 slices crispy bacon Ensure bacon is cooked and crumbled.
  • 1 cup mozzarella cheese Shredded mozzarella works best.
  • ½ cup ranch dressing Use your favorite brand.
  • 2 tablespoons green onions Chopped for garnish and flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix together the shredded chicken, chopped bacon, ranch dressing, and diced green onions.
  • On a baking sheet lined with parchment paper, sprinkle shredded mozzarella cheese into circles.
  • Bake the cheese for about 5-7 minutes, until it melts and slightly browns.
  • Once the cheese is melted, let it cool for a minute to become flexible for rolling.
  • Carefully remove the cheese rounds from the baking sheet and spoon a generous amount of the chicken mixture onto each round.
  • Roll the cheese around the filling tightly to form taquitos.
  • Place the rolled taquitos back on the baking sheet and bake for another 10-12 minutes or until golden brown.

Notes

Serve with ranch dressing for dipping or alongside a fresh salad for a complete meal. Store leftovers in an airtight container for up to 3 days in the fridge.
