- 2 cups cooked shredded chicken
- ½ cup cooked and crumbled bacon
- ½ cup shredded cheddar cheese
- ¼ cup cream cheese softened
- 2 tablespoons ranch dressing
- 8 slices mozzarella cheese or low-carb tortillas if preferred
- 1 tablespoon chopped green onions optional
- Salt and pepper to taste
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Lay mozzarella slices on the sheet, making sure they don’t touch. Bake for 5–7 minutes until edges bubble and brown slightly.
While cheese is baking, mix shredded chicken, bacon, cheddar, cream cheese, ranch dressing, green onions, salt, and pepper in a bowl.
Remove cheese slices from oven and let them cool for about 1 minute (they should still be pliable).
Place a spoonful of the chicken mixture on one edge of each cheese slice, then roll tightly into taquitos.
Return to oven for 2–3 minutes to reheat and crisp up if desired.
