Ingredients
  

  • 2 cups cooked shredded chicken
  • ½ cup cooked and crumbled bacon
  • ½ cup shredded cheddar cheese
  • ¼ cup cream cheese softened
  • 2 tablespoons ranch dressing
  • 8 slices mozzarella cheese or low-carb tortillas if preferred
  • 1 tablespoon chopped green onions optional
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Lay mozzarella slices on the sheet, making sure they don’t touch. Bake for 5–7 minutes until edges bubble and brown slightly.
  • While cheese is baking, mix shredded chicken, bacon, cheddar, cream cheese, ranch dressing, green onions, salt, and pepper in a bowl.
  • Remove cheese slices from oven and let them cool for about 1 minute (they should still be pliable).
  • Place a spoonful of the chicken mixture on one edge of each cheese slice, then roll tightly into taquitos.
  • Return to oven for 2–3 minutes to reheat and crisp up if desired.
  • Let cool slightly and serve with extra ranch or dip of choice.
