- ½ cup natural peanut butter sugar-free
- ¼ cup granulated erythritol or preferred keto sweetener
- 2 tablespoons coconut flour
- 1 large egg
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- Pinch of salt
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, mix peanut butter, egg, and sweetener until well combined.
Add coconut flour, vanilla extract, baking soda, and a pinch of salt. Stir until dough forms.
Let the dough rest for 2–3 minutes to allow the coconut flour to absorb moisture.
Scoop 1-tablespoon portions and roll into balls. Place on the baking sheet and flatten slightly with a fork (criss-cross pattern optional).
