Ingredients
  

For the Scotch Eggs

  • 6 large large eggs Boiled and cooled.
  • 1 pound breakfast sausage (pork or turkey) Choose a high fat, low carb option.
  • ½ cup grated Parmesan cheese Optional for additional flavor.
  • 1 teaspoon onion powder For seasoning.
  • 1 teaspoon garlic powder For seasoning.
  • ½ teaspoon black pepper To taste.

For the Mustard Dip

  • ½ cup mayonnaise Base for creaminess.
  • 2 tablespoons stone-ground mustard Adds tanginess.
  • 1 tablespoon lemon juice Brightens the flavor.
  • 1 teaspoon dried dill Enhances aroma.
  • to taste cracked pepper Adds heat and texture.

Instructions
 

Boiling the Eggs

  • Use the Instant Pot: Add 6 eggs and 1 cup of water. Set to high pressure for 5 minutes, then wait 5 minutes before releasing the pressure.
  • For stovetop: Place eggs in a saucepan covered with cold water. Boil, turn off heat, cover and let sit for 9-12 minutes. Cool in an ice bath.

Preparing the Sausage Mixture

  • In a bowl, combine the breakfast sausage, grated Parmesan cheese, onion powder, garlic powder, and black pepper. Mix well.

Wrapping the Eggs

  • Divide the sausage mixture into equal portions. Flatten each portion and wrap around each boiled egg, ensuring an even layer.
  • Pinch the sausage to seal any cracks that may appear.

Cooking the Scotch Eggs

  • Preheat the air fryer to 390°F.
  • Place the wrapped eggs in the air fryer basket and cook for 12-15 minutes, flipping halfway through.

Preparing the Mustard Dip

  • In a small bowl, mix mayonnaise, stone-ground mustard, lemon juice, dried dill, and cracked pepper until smooth.

Notes

Serve warm or cold, and enjoy with the mustard dip. Store in an airtight container in the fridge for up to three days, or freeze for up to two months.
