Ingredients
  

  • 1 cup plain unsweetened Greek yogurt
  • 3 large eggs
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ½ cup erythritol or other keto sweetener
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • Optional: lemon zest or berries for added flavor

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a small cake pan or line it with parchment paper.
  • In a large bowl, whisk together yogurt, eggs, sweetener, and vanilla until smooth.
  • Add almond flour, coconut flour, baking powder, salt, and mix until just combined.
  • Pour the batter into the prepared cake pan.
  • Bake for 35–40 minutes or until a toothpick comes out clean from the center.
  • Let the cake cool before slicing. Optional: serve with whipped cream or fresh berries.
