- 1 cup plain unsweetened Greek yogurt
- 3 large eggs
- ½ cup almond flour
- ¼ cup coconut flour
- ½ cup erythritol or other keto sweetener
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Optional: lemon zest or berries for added flavor
Preheat oven to 350°F (175°C). Grease a small cake pan or line it with parchment paper.
In a large bowl, whisk together yogurt, eggs, sweetener, and vanilla until smooth.
Add almond flour, coconut flour, baking powder, salt, and mix until just combined.
Pour the batter into the prepared cake pan.
Bake for 35–40 minutes or until a toothpick comes out clean from the center.
Let the cake cool before slicing. Optional: serve with whipped cream or fresh berries.
