Ingredients
  

For the Beef

  • 1 lb Ground beef (93% lean) Can substitute with ground turkey or chicken.
  • 2 cloves Garlic, minced
  • 1 tbsp Grated ginger
  • ¼ cup Soy sauce (low sodium recommended) For umami flavor.
  • 2 tbsp Gochujang Optional for spice.
  • 1 tbsp Sesame oil Adds nutty aroma.
  • 1 tsp Brown sugar For sweetness.
  • ½ tsp Red pepper flakes Adjust for spiciness.

For the Rice Base

  • 1 cup Short-grain rice Rinse until water is clear.

For the Toppings

  • 1 cup Cucumbers, sliced Can quick-pickle.
  • 1 cup Shredded carrots
  • 1 tsp Sesame seeds For garnish.
  • 2 stalks Green onions Sliced for garnish.
  • 1 tbsp Spicy mayo Optional for extra flavor.

Preparation

  • Rinse the rice until the water is clear, then cook it in a pot or rice cooker using a 1:1.25 ratio of rice to water.

Cooking the Beef

  • Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
  • Add the minced garlic and grated ginger and sauté for 1 minute.
  • Whisk together soy sauce, gochujang, sesame oil, brown sugar, and red pepper flakes in a bowl and pour over the beef. Simmer for 2 minutes until it thickens.

Preparing Vegetables

  • For quick pickles, toss sliced cucumbers with salt, let sit for 5 minutes, then add rice vinegar and honey.

Assembling the Bowl

  • Start with a layer of rice in bowls, then top with the beef mixture and the cucumber salad.
  • Garnish with green onions, sesame seeds, and drizzle with spicy mayo if desired. Serve with lime wedges.

Notes

Customize the spice level by adjusting gochujang or adding vegetables for added nutrition. Meal prep by cooking extra rice and beef.
