Lamb Kofta Meatballs

A flavorful and easy tray bake dinner that combines perfectly spiced lamb kofta meatballs with vibrant vegetables, served with tahini sauce.

Ingredients
  

For the Kofta Meatballs

  • ½ piece onion (grated using a box grater)
  • 500 g lamb mince (ground lamb) or beef
  • ¼ cup panko breadcrumbs (substitute with regular breadcrumbs)
  • 2 cloves garlic (finely minced)
  • 2 tbsp coriander/cilantro (finely chopped)
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp paprika (plain; smoked optional)
  • 1 ½ tsp ground cinnamon
  • ¾ tsp cayenne pepper add according to your spice preference
  • ¾ tsp cooking salt / kosher salt
  • ½ tsp black pepper

For the Roasted Vegetables

  • 1 large red capsicum (deseeded, sliced into 1 cm thick slices)
  • 1 large yellow capsicum (deseeded, sliced into 1 cm thick slices)
  • 1 piece red onion (cut into thin wedges)
  • 1 tbsp extra virgin olive oil
  • ¼ tsp cooking/kosher salt
  • ¼ tsp black pepper
  • spray Olive oil spray (for the meatballs)

To Serve

  • 4 pieces flatbreads (or rice, couscous, or cauliflower rice)
  • 1 quantity tahini sauce
  • 3 cups shredded iceberg lettuce (or other leafy greens)
  • 2 pieces tomatoes (halved and cut into thin slices)
  • 1 tbsp coriander/cilantro leaves (finely chopped, for sprinkling)

Instructions
 

Preparation

  • Preheat the oven to 200°C/400°F (180°C fan-forced).
  • In a bowl, combine the kofta ingredients and spices. Use your hands to mix everything well, then roll the mixture into 16 large meatballs and spread them out on a large tray.
  • Toss the vegetable ingredients with olive oil, salt, and pepper, then scatter them around the meatballs on the tray.
  • Give the meatballs a light spray with olive oil.

Cooking

  • Bake the tray for 15 minutes.
  • Switch the oven to grill/broil on high for an additional 5 minutes to get some color on the meatballs.

Serving

  • Once cooked, sprinkle with chopped coriander and serve! To create wraps, fill flatbreads with lettuce, tomatoes, meatballs, and roasted capsicum and onion. Drizzle generously with tahini sauce before enjoying!

Notes

For extra flavor, let the meat mixture sit for 30 minutes before rolling the meatballs. Adjust the spices according to your taste preferences. Don't skip the tahini sauce! It adds a delicious creaminess that complements the meatballs perfectly.
