  • 4 boneless, skinless chicken breasts about 1 1/2 lb total
  • 1 tbsp lemon pepper seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • ¼ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley chopped, for garnish

  • Preheat the oven to 400 degrees F. Pat the chicken dry and coat both sides with the lemon pepper seasoning, salt, and pepper.
  • Heat the olive oil in an oven safe skillet over medium-high heat and sear the chicken for about 3 minutes per side until golden, then transfer to a baking dish.
  • Lower the heat, melt the butter in the skillet, stir in the garlic for about 30 seconds, then stir in the lemon juice.
  • Pour the garlic lemon butter over the chicken and bake for 20 to 25 minutes until the thickest part reaches 165 degrees F.
  • Rest the chicken for 5 minutes, spoon the pan juices over the top, and sprinkle with parsley.

Notes

Pat the chicken dry before seasoning for the best sear. Slice very thick breasts in half so they cook evenly. Add the garlic after searing so it does not burn. Lemon pepper seasoning is salty, so taste before adding more salt.
