Main Ingredients
- 9 cup rice or corn cereal squares
- 1 ¼ cup white chocolate chips
- ¼ cup unsalted butter
- 1 cup powdered sugar
- 2 tbsp powdered lemonade drink mix divided
Cooking
Set up. Line a baking sheet with parchment and put the cereal in a very large bowl.
Melt. Microwave the white chocolate chips and butter in 30 second intervals, stirring each time, for 2 to 3 minutes total until smooth.
Flavor. Stir in 1 tablespoon of lemonade mix until fully blended.
Coat. Pour the mixture over the cereal and fold gently until every piece is evenly coated.
Dust and cool. Toss with the powdered sugar and remaining lemonade mix, spread on the sheet, and cool for 30 minutes until set.
Substitutions: Lemon zest can add extra brightness, and any crisp cereal can replace the squares.
Tips: Heat white chocolate in short intervals and fold gently to keep the pieces whole.
Storage: Keep in an airtight container at room temperature up to 1 week or freeze up to 2 months.
