Main Ingredients
- 2 large flour tortillas
- 10 oz ground beef browned and drained
- 4 slices bacon cooked crisp and crumbled
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- ¼ cup prepared creamy cheese sauce
- 1 small onion diced and sauteed in bacon fat
- 1 lettuce leaves for topping
- 1 tomato slices for topping
- ¼ tsp freshly ground black pepper to taste
Cooking
Brown the beef. Cook the beef in a skillet over medium high heat for 6 to 8 minutes, breaking it up, until no pink remains and it reaches 160 degrees F. Season with pepper and set aside. Crisp the bacon. Fry the bacon in a second pan for 8 to 10 minutes until it snaps. Drain on paper towels, crumble, and keep 1 tablespoon of the fat.
Cook the onion. Saute the onion in the saved fat over medium heat for about 5 minutes until soft and lightly golden.
Make the burger sauce. Whisk the mayonnaise, ketchup, and mustard in a small bowl until smooth.
Warm the tortillas. Heat each tortilla in a dry pan for a few seconds until pliable.
Fill. Layer the beef, bacon, onion, both cheeses, lettuce, tomato, and cheese sauce down the center of each tortilla.
Roll and slice. Spoon on the burger sauce, fold in the sides, roll up tight, and slice in half with a sharp knife.
Substitutions: Use ground turkey with a little oil, or pepper jack for heat.
Tips: Warm the tortillas first, keep the filling in the center third, and add lettuce and tomato fresh.
Storage: Wrap tightly and refrigerate up to 2 days. Reheat in a skillet until hot in the center.
