Ingredients
  

For the meat mixture

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the potato layer

  • 4 large potatoes, peeled and diced
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese divided

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the ground beef, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper until well combined.
  • In a separate bowl, combine the diced potatoes, sour cream, milk, and half of the cheddar cheese.

Assembly & Baking

  • Layer the meat mixture in the bottom of a greased casserole dish.
  • Spread the potato mixture on top of the meat layer.
  • Top with the remaining cheddar cheese.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  • Let rest for 10 minutes before serving.

Notes

For extra flavor, add favorite seasonings or herbs to the meat mixture. For a crispy top, broil the casserole for a few minutes after baking. Customize with ground turkey or chicken, or use plant-based ground meat and vegetables.
