  • 2 heads medium to large heads of broccoli (about 1 kg / 2 lb)
  • 2 cloves garlic (finely sliced or minced)
  • 2.5 tbsp extra virgin olive oil
  • 0.5 tsp salt (adjust to your taste)
  • black pepper
  • 0.5 unit zest of half a lemon
  • 1 tbsp lemon juice
  • 2 tbsp freshly grated parmesan cheese (plus more for garnish)

Preparation

  • Preheat your oven to 220°C (425°F), or 200°C for a fan oven.
  • Cut or break the broccoli into florets and pile them onto a baking tray. (You can also use the stems – just peel and chop them!)
  • Drizzle the broccoli with extra virgin olive oil and scatter the garlic, salt, and black pepper over the top. Toss everything together with your fingers or tongs.
  • Spread the seasoned broccoli out in a single layer on the tray.

Roasting

  • Roast the broccoli in the oven for 20 to 25 minutes until the tips of the florets are slightly browned and crispy. The broccoli should be tender but crunchy.
  • Remove from the oven and drizzle with lemon juice, zest, and parmesan cheese. Toss quickly, transfer to a serving plate, and garnish with extra parmesan. Serve warm!

Notes

For an even crispier texture, ensure the broccoli is spread out evenly on the baking tray. You can experiment with different seasonings like red pepper flakes or garlic powder. Use fresh garlic for the best flavor, but you can also swap it for garlic powder if you’re in a pinch.
