  • ½ cup unsalted butter 1 stick of butter
  • 1 cup all-purpose flour
  • 1 ¼ cups granulated sugar (divided) 1 cup for batter, 1/4 cup for lemon mixture
  • 1 cup milk
  • 2 cups fresh lemon juice Use fresh for best flavor
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Melt the butter and pour it into a baking dish.
  • In a bowl, mix the flour, 1 cup of sugar, baking powder, and salt.
  • Stir in the milk and mix until smooth.
  • Pour the batter over the butter in the baking dish.
  • In another bowl, mix the remaining 1/4 cup of sugar with the lemon juice.
  • Pour the lemon mixture over the batter (do not stir).

Baking

  • Bake for 40-45 minutes until golden brown.
  • Let it cool slightly before serving.

Notes

Serve warm, optionally with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to three days or freeze for up to one month. Fresh lemon juice is recommended for best flavor.
