Make Keto Scotch Eggs in the Air Fryer

- 4 large eggs plus 1 extra egg for coating
- 1 lb ground pork sausage or ground meat of choice
- ½ cup almond flour
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- Cooking spray for the air fryer
4 large eggs (plus 1 extra egg for coating)
Boil the Eggs: Place 4 eggs in a pot, cover with cold water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10 minutes. Then, cool eggs in an ice bath, peel, and set aside.
Prepare Sausage Coating: In a bowl, season the ground sausage with garlic powder, onion powder, smoked paprika, salt, and pepper.
Wrap the Eggs: Divide the sausage into 4 portions. Flatten each into a patty and carefully wrap each hard-boiled egg completely in sausage.
Coat the Eggs: Beat the remaining egg in a bowl. In another bowl, mix almond flour and Parmesan. Dip each sausage-wrapped egg into the beaten egg, then into the almond flour mixture, coating well.
Air Fry: Preheat the air fryer to 400°F (200°C). Lightly spray the basket with cooking spray. Place Scotch eggs in the air fryer basket, making sure they do not touch. Air fry for 16–18 minutes, turning halfway through, until golden and cooked through.
Serve: Let cool slightly before serving. Enjoy warm or cold!
