Salad Base

  • 1 package dry vanilla instant pudding mix (sugar-free if preferred)
  • 1 large can undrained crushed pineapple
  • 2 medium or large cans drained mandarin oranges Reserve some slices for garnish
  • 1 package (8 oz) Cool Whip (fat-free optional)

Preparation

  • In a large bowl, mix the Cool Whip with the dry vanilla pudding mix. Do not prepare the pudding in a separate bowl.
  • Gently fold in the undrained crushed pineapple and drained mandarin oranges.
  • Cover the bowl and refrigerate for a few hours to let it thicken.

Serving

  • Serve chilled as a side dish or dessert, garnished with reserved mandarin slices.

Notes

For an extra fruity twist, you can add mini marshmallows or shredded coconut. If you prefer a lighter version, use fat-free Cool Whip and sugar-free pudding mix. Make sure to drain the mandarin oranges well to avoid excess liquid in the salad. Any leftovers can be stored in an airtight container for 3 to 4 days.
