Main Ingredients
- 4 tbsp mango puree fresh or sweetened jarred
- 1 lime juiced
- 10-12 fresh mint leaves
- 4 oz light rum
- ⅔ oz simple syrup adjust to taste
- ¼ cup soda water to top
- 1 cup ice cubes for serving
Cooking
Make the puree. Blend the chunks of 1 ripe mango until completely smooth. Skip this step if using jarred puree.
Muddle. In a shaker or sturdy glass, muddle the mint and lime juice until the mint smells fragrant.
Mix. Stir in the mango puree, rum, and simple syrup. For a colder drink, add ice and shake for about 10 seconds until frosty.
Pour. Strain into two tall glasses filled with ice.
Top and garnish. Add soda water, stir gently, and garnish with mint and a slice of lime or mango.
Substitutions: Thawed frozen mango works. Gold rum makes a warmer drink.
Tips: Use ripe mango, and cut back on the syrup if the puree is already sweet.
Storage: Refrigerate leftovers without soda for up to 1 day and add fresh soda water when serving.
