Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure the butter is softened to room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda If you don’t have baking soda, you can use baking powder as a substitute.
  • ½ teaspoon salt

Mix-ins

  • 1 cup chocolate chips
  • 1 cup chopped maraschino cherries Drain the cherries well before chopping to avoid moisture.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Combine the flour, baking soda, and salt in a separate bowl; gradually add this to the creamed mixture.
  • Stir in the chocolate chips and chopped cherries.

Baking

  • Drop rounded tablespoons of dough onto ungreased cookie sheets.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

These cookies are best served warm, straight from the oven, or at room temperature. They pair well with milk or ice cream. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
