Ingredients
  

For the marinade

  • 2 Tbsp finely chopped fresh dill Fresh herbs provide great flavor.
  • 2 Tbsp finely chopped parsley Fresh herbs provide great flavor.
  • ½ Tbsp red jalapeno pepper, finely minced Adjust based on spice preference.
  • 3 ½ Tbsp organic cane sugar Balances the acidity of vinegar.
  • 2 ½ Tbsp sea salt Enhances flavors.
  • 3 Tbsp white distilled vinegar Adds acidity to the marinade.
  • 6 Tbsp sunflower oil Base for the marinade.
  • 2 Tbsp water Dilutes the marinade slightly.

For the main ingredients

  • 3 pints cherry tomatoes About 2.5 pounds; ripe tomatoes work best.
  • 1 medium-sized red bell pepper Chopped finely.
  • 6 cloves garlic, finely minced Adjust based on preference.

Instructions
 

Preparation

  • Finely chop the red bell pepper, garlic, and herbs.
  • Whisk all chopped ingredients together with the remaining marinade ingredients in a bowl.
  • Score a cross on the bottom of each cherry tomato.
  • Add the scored tomatoes to the marinade and toss them gently to coat.
  • Cover the bowl and marinate the tomatoes in the fridge for at least 12 hours before serving.

Notes

Marinated cherry tomatoes can be served in various ways: as a side dish, over salads, pasta, or on a platter with crackers or bread. Drizzling some of the marinade on top will enhance their taste.
