Chicken and Sauce Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3-4 cloves Garlic Minced finely for even distribution.
  • 2 tablespoons Unsalted butter For cooking the roux.
  • 2 tablespoons Flour To create the roux.
  • 1 cup Chicken broth For flavoring the sauce.
  • 1 cup Heavy cream Creates a rich sauce foundation.
  • ½ cup Sun-dried tomatoes Add bold flavor contrast.

Pasta Ingredients

  • 8 ounces Penne pasta Cook until al dente.
  • ½ cup Parmesan cheese Grated, to serve.

Seasonings

  • to taste Salt
  • to taste Black pepper
  • optional Red pepper flakes For a spicy kick.

Instructions
 

Preparing the Chicken and Sauce

  • Season chicken breasts with salt and pepper.
  • Heat a skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown. Remove and let it rest.
  • In the same pan, melt butter and mix in flour to create a roux, cooking for 2-3 minutes.
  • Slowly add chicken broth, stirring constantly, then incorporate heavy cream and let simmer for about 15 minutes, until the sauce thickens.

Combining Pasta with the Sauce

  • Cook the penne pasta al dente according to package instructions, saving 1/2 cup of pasta water before draining.
  • Add the cooked pasta to the sauce, tossing to coat. If too thick, add reserved pasta water gradually until desired consistency is reached.
  • Serve hot, topped with grated Parmesan cheese and optional herbs.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce. To make the dish dairy-free, swap cream with coconut milk.
