Ingredients
  

Meatloaf ingredients

  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper

Casserole ingredients

  • 1 cup cooked shell pasta Cook according to package instructions.
  • 2 cups cheddar cheese, shredded Feel free to substitute with mozzarella or pepper jack.
  • 1 cup tomato sauce

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the ground beef, breadcrumbs, egg, chopped onion, garlic powder, salt, and pepper. Shape this mixture into a loaf.
  • Place the meatloaf into a baking dish and bake for 30 minutes.

Cooking

  • While the meatloaf bakes, cook the shell pasta according to the package instructions.
  • After the meatloaf has baked for 30 minutes, take it out of the oven. Surround the meatloaf with the cooked shell pasta.
  • Pour the tomato sauce over the meatloaf and pasta, then sprinkle the shredded cheddar cheese on top.
  • Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  • Allow it to cool slightly before serving.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3-4 days. This casserole also freezes well for up to 3 months when tightly wrapped.
